Ingredients

- Green chillies – 2 (slit lengthwise)

- Cornmeal – 1 tablespoon
- Butter – 4 tablespoons
- Cumin seeds – 1 teaspoon
- Salt to taste
Instructions
In a heavy-bottomed pan, heat the butter and add the cumin seeds. Once the cumin seeds start to splutter, add the garlic, ginger, and green chillies. Saute for a few minutes until the garlic starts to turn golden.
Add the chopped tomatoes and sauté until they turn soft and mushy. Now add the chopped greens and mix them well with the other ingredients. Cover the pan and let the greens cook on low heat for about 10-15 minutes. Stir the mixture occasionally to ensure that it does not stick to the bottom of the pan.
Once the greens are cooked, add the cornmeal and mix it well. Cover the pan again and let the mixture cook for another 10 minutes or until all the flavors have blended together. Once the saag is cooked, turn off the heat and let it cool down.
Once the saag is cool, blend it in a blender or food processor until it forms a smooth paste. Now transfer the paste back to the pan and cook it on low heat for a few minutes, stirring occasionally. Add salt to taste and mix it well. Serve the saag hot with makki di roti and dollops of butter.
