To make ghee rice, start by washing the basmati rice and soaking it in water for 30 minutes. Once the rice is soaked, drain it and set it aside. In a medium-size pot, heat the ghee over medium heat. Once the ghee is hot, add the cumin seeds, mustard seeds, turmeric powder, coriander powder, garam masala, and red chilli powder. Stir the spices for about a minute until they become fragrant. Then add the drained rice and stir it for a few minutes until it is well-coated with the spices.

Next, add 2 cups of water and the salt to the pot. Bring the mixture to a boil, reduce the heat, and cover the pot. Let the rice cook for about 15 minutes until it is tender and all the water has been absorbed. Once the rice is cooked, turn off the heat and let it sit for 5 minutes. Then fluff the rice with a fork and add the cashew nuts, raisins, and chopped coriander leaves. Mix the ingredients together and serve the ghee rice with your favorite stew or curry.
