- 1/2 cup whole wheat flour (atta)
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 tbsp ghee or oil
- 1/2 cup mashed potatoes
- 1 tsp cumin
- 1/2 tsp turmeric powder

- 1/2 tsp coriander powder
- 1/2 tsp amchur powder
- 2-3 tbsp chopped fresh coriander leaves
- 1/4th cup water, as required

Instructions
Making the Dough:
In a large bowl, mix the all-purpose flour, wheat flour, salt, and baking soda. Add the ghee or oil and mix it well into the flour with your fingertips until it resembles a coarse meal. Gradually add in the water and knead into a soft dough. Cover the dough with a damp kitchen towel and set aside for 15-20 minutes.
Making the Filling:
In a small bowl, mix together the mashed potatoes, cumin, turmeric powder, garam masala, chilli powder, coriander powder, amchur powder, and coriander leaves. Mix it all together until everything is combined well.
Making the Parathas:
Take a small portion of the dough and roll it out into a small circle. Place a spoonful of the potato filling in the center of the circle and gather the edges of the dough together to make a pouch. Pinch the edges together to seal the filling inside the dough. Roll out the pouch into a circle of about 6-7 inches in diameter.
Heat a skillet or griddle over high heat. Place the paratha on the skillet and cook for a few seconds. Flip the paratha over and cook until the bottom is golden brown. Flip the paratha over again and brush the top with a little ghee or oil. Cook until both sides are golden brown and crisp. Serve the paratha hot with a dollop of butter or a side of yogurt.
