Instructions

Step 1: Prepare the Filling


Preheat your oven to 200°C/Gas Mark 6. Heat the oil in a large frying pan over a medium heat and brown the steak in batches. When cooked, transfer the steak to a plate. Add the onion to the pan and fry until softened, then add the garlic and fry for a further minute.

Step 2: Make the Sauce


Sprinkle the flour over the onion and garlic and stir for about a minute. Add the tomato purée, ale, Worcestershire sauce, mustard, sugar and thyme leaves, and stir until the sauce has thickened. Return the steak to the pan and simmer for 10 minutes.

Transfer the steak and ale filling to an ovenproof dish. Roll out the puff pastry and cover the dish, pressing the edges to seal. Cut a small hole in the centre of the pastry to allow steam to escape. Brush the top of the pastry with the beaten egg.
