Makki Ki Roti And Sarson Ka Saag: A Traditional Punjabi Dish

Ingredients

- 2 bunches of mustard greens (sarson)
- 2 bunches of spinach

- 1 teaspoon of red chilli powder
- 2 tablespoons of ghee
- Salt to taste
- 2 tablespoons of corn flour
- 2 tablespoons of white butter

Instructions



For Makki Ki Roti:

1. In a large bowl, mix together the maize flour, salt, and ajwain.
2. Add the ghee and mix it in with the dry ingredients.
3. Add lukewarm water little by little and knead the dough until it is soft and pliable.
4. Divide the dough into 8-10 small balls.
5. Take one ball at a time and roll it out on a floured surface with a rolling pin into a thin disc.
6. Heat a griddle and place the roti on it. Cook it on both sides until it is golden brown.
7. Serve the roti hot with a dollop of white butter.

For Sarson Ka Saag:

1. In a large pot, heat 2 tablespoons of ghee.
2. Add the cumin seeds and let them crackle.
3. Add the chopped onion and garlic and sauté until they are golden brown.
4. Add the chopped mustard greens and spinach and sauté for a few minutes.
5. Add the red chilli powder and salt and mix it in.
6. Cover the pot and let the vegetables cook on medium heat for 10-15 minutes.
7. Mash the cooked vegetables with the back of a ladle.
8. In a small bowl, mix the corn flour and some water to make a paste.
9. Add the corn flour paste to the cooked vegetables and mix it in.
10. Cook for 5-7 minutes until the saag thickens.
11. Add the white butter and mix it in.
12. Serve the saag hot with Makki Ki Roti.
