Ingredients
To make this delicious Aubergine Curry, you will need the following ingredients: 2 large aubergines, 1 onion, 2 cloves of garlic, 1 tablespoon of grated ginger, 2 green chillies, 1 teaspoon of cumin seeds, 1 teaspoon of coriander seeds, 2 tablespoons of vegetable oil, 1 teaspoon of turmeric, 2 tablespoons of garam masala, 2 tablespoons of tomato puree, 2 tablespoons of natural yoghurt, 1 teaspoon of sugar and 2 tablespoons of freshly chopped coriander. Instructions
Start by preparing the aubergine for cooking. Cut into bite-size pieces and set aside. Heat the oil in a large saucepan or wok. Add the cumin and coriander seeds, and cook for a minute or two until they start to sizzle.
