  • 3 slices of white bread, crumbled
  • 2 eggs, beaten
  • Salt and pepper, to taste

Instructions

This Bobotie recipe is easy to make and can be served with rice or vegetables. Here’s how to make it:

  1. Preheat the oven to 180°C.
  2. Heat the oil in a large frying pan over medium-high heat. Add the onion and garlic and cook for 3-4 minutes until softened.
  3. Add the mince and cook for 5-6 minutes, stirring frequently, until the mince is browned. Add the spices and cook for a further minute.
  4. Add the apricot jam, lemon juice, Worcestershire sauce and beef stock. Bring to the boil, reduce the heat and simmer for 5 minutes.
  5. Add the raisins and crumbled bread and stir to combine. Remove from the heat and allow to cool slightly.
  6. Transfer the mince mixture to a baking dish. Pour the beaten eggs over the top of the mince and spread evenly.
  7. Bake for 25-30 minutes until golden brown and set.
  8. Serve with rice or vegetables.
