Mary Berry's Lemon Drizzle Cake



Mary Berry's Lemon Drizzle Cake is a delicious dessert that is perfect for any occasion. This classic cake is light, airy, and full of delicious lemon flavor. It's sure to be a hit with your family and friends.

Ingredients



For this recipe, you will need the following ingredients:

- 225 g (8 oz) butter, softened
- 225 g (8 oz) caster sugar
- 4 large eggs
- 225 g (8 oz) self-raising flour
- 2 lemons, zested and juiced
- 2 tablespoons of milk
- 2 tablespoons of sugar

Instructions



1. Preheat the oven to 180°C (350°F/Gas 4). Grease and line a 20 cm (8 inch) round cake tin.

2. Cream the butter and caster sugar together until light and fluffy. Gradually add the eggs and beat until fully combined.

3. Fold in the flour, lemon zest, and milk until fully combined.

4. Pour the mixture into the prepared cake tin and bake for 35-40 minutes, or until a skewer inserted into the centre of the cake comes out clean.

5. Leave the cake to cool in the tin for 10 minutes, before turning out onto a wire rack.

6. For the drizzle, mix together the lemon juice and sugar until the sugar has dissolved. Prick the top of the cake all over with a skewer or fork, and pour the drizzle over the cake. Leave to cool completely.

7. Serve with fresh cream and a sprinkle of lemon zest. Enjoy!

Tips and Variations
