Green Tomato Chutney Udupi Style

Ingredients
- 3 cups of chopped green tomatoes

Instructions
Step 1:
Heat oil in a pan over medium heat. Add mustard seeds, cumin seeds, and fenugreek seeds. Once the seeds start to crackle, add the chopped green tomatoes and sauté for 5 minutes.
Step 2:
Add the jaggery, tamarind paste, red chilli powder, turmeric powder, asafoetida, and salt to taste. Mix everything together and let it cook for 10 minutes.
Step 3:
Once the mixture has thickened, remove it from heat and let it cool. Once it has cooled, transfer it to a food processor or blender and blend until it is a smooth paste.
Step 4:
Transfer the chutney to a jar and store in the refrigerator for up to 1 week.
