Instructions
Preheat oven to 350°F (175°C). Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the thyme, oregano, mushrooms, carrots, green beans, and frozen peas. Cook for an additional 5 minutes, stirring occasionally. Add the beef broth, tomato paste, and soy sauce and cook for another 5 minutes. Remove from heat and set aside.
In a medium saucepan, melt the vegan butter over medium heat. Add the flour and whisk until combined. Slowly add the almond milk, whisking constantly to prevent lumps from forming. Continue whisking until the sauce thickens, about 5 minutes. Remove from heat.
