Ingredients



- 4 eggs
- 175g melted butter
- 175g self-rising flour
- 175g caster sugar
- 2-3 lemons
- Icing sugar

1. Preheat your oven to 180C (Gas Mark 4). Grease and line a 12-hole mini cake tin with paper cases.

2. In a bowl, whisk together the eggs, butter and caster sugar until light and fluffy.

3. Sift in the self-rising flour and mix until everything is well combined.

4. Divide the mixture evenly between the 12 paper cases and bake in the oven for 15-20 minutes, until risen and golden brown.

5. Meanwhile, zest the lemons and squeeze the juice.

6. When the cakes are done, remove from the oven and leave to cool slightly before transferring to a wire rack.

7. Once the cakes are cool enough to handle, poke holes in the top of each cake with a skewer and spoon over some of the lemon juice.

8. Sift the icing sugar into a bowl, add the lemon zest and enough lemon juice to make a thick icing.

9. Drizzle the icing over the top of each cake and leave to set.
