Ingredients

  • 2 tablespoons of olive oil
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 1 pound of chuck steak, cut into cubes
  • 1/2 cup of all-purpose flour
  • 2 cups of beef broth
  • 1 cup of dark ale or stout beer
  • 2 tablespoons of tomato paste
  • 1 tablespoon of Worcestershire sauce
  • 1/2 teaspoon of dried thyme
  • 1/2 teaspoon of dried oregano
  • 1/4 teaspoon of ground black pepper
  • 1/4 teaspoon of ground nutmeg
  • 1/4 cup of cold water
  • 2 tablespoons of cornstarch
  • 1/2 teaspoon of kosher salt
  • 1/4 cup of butter, chilled and cubed
  • 2 prepared pie crusts
  • 1 egg, beaten

Instructions

Step 1:



In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook for 4-5 minutes until the onion is softened and lightly browned. Add the steak and cook for 4-5 minutes until the steak is browned.

Step 2:



Add the flour and stir to coat the steak. Cook for 1 minute to cook out the raw flour taste. Add the beef broth, beer, tomato paste, Worcestershire sauce, thyme, oregano, pepper and nutmeg. Stir to combine. Bring the mixture to a simmer and cook for 15 minutes until the steak is tender.

Step 3:



In a small bowl, whisk together the cold water and cornstarch until the cornstarch is dissolved. Add the cornstarch mixture to the pot and stir to combine. Simmer for 5 minutes until the sauce is thickened. Taste and adjust the seasonings as desired.

Step 4:



Preheat the oven to 375°F. Grease a 9 inch pie plate and set aside.

Step 5:



Add the salt to the steak filling and stir to combine. Pour the filling into the pie plate. Place one of the pie crusts over the filling, pressing the edges to seal. Cut 4-5 slits in the top of the pie crust. Place the remaining pie crust on top of the filling and press the edges together to seal. Cut 4-5 slits in the top of the pie crust.

Step 6:



Brush the top of the pie with the beaten egg and sprinkle with a pinch of kosher salt. Cut the butter into small cubes and place them on top of the pie. Bake for 25-30 minutes until the crust is golden brown. Let cool for 10 minutes before serving. Enjoy!
