  • 1 can of full-fat coconut milk
  • 1 teaspoon of tomato paste
  • 1/2 cup of frozen peas
  • 1/2 cup of freshly chopped cilantro, for garnish
  • Salt and pepper, to taste

Instructions

Begin by prepping the prawns. Peel and devein the prawns, then rinse them under cold water. Pat them dry with paper towels, then season them with salt and pepper.

Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and sauté for about 5 minutes, or until the onion is soft and translucent. Add the ginger and all the spices, and sauté for another minute. Add the tomato paste and coconut milk and bring the mixture to a boil. Reduce the heat to low and let the sauce simmer for about 10 minutes.
