Introduction
Chicken Tikka Masala is one of the most popular Indian dishes. It is a creamy, mildly spiced tomato-based curry that is full of flavour. This easy Chicken Tikka Masala recipe is perfect for a mid-week dinner, and can be served with rice or naan bread. If you’re looking for an easy, delicious and healthy meal – this is it!
Ingredients
For the marinade: 2 chicken breasts, diced into cubes, 2 tablespoons of plain yoghurt, 1 teaspoon of garam masala, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1 teaspoon of paprika, 1/2 teaspoon of chilli powder, 1 teaspoon of ginger paste, 1 teaspoon of garlic paste, 1 tablespoon of lemon juice, 1 tablespoon of olive oil, salt and pepper to taste.
For the sauce: 2 tablespoons of olive oil, 1 onion, finely chopped, 2 cloves of garlic, finely chopped, 1 teaspoon of ginger paste, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1 teaspoon of garam masala, 1 teaspoon of paprika, 1/2 teaspoon of chilli powder, 2 tablespoons of tomato purée, 400ml of passata, 1 tablespoon of sugar, 1 tablespoon of lemon juice, 2 tablespoons of cream, salt and pepper to taste.
Instructions
1. Start by marinating the chicken. In a bowl, combine the yoghurt, garam masala, cumin, coriander, paprika, chilli powder, ginger paste, garlic paste, lemon juice, olive oil, salt and pepper. Add the chicken cubes and mix everything together. Cover the bowl and leave to marinate for at least 1 hour in the fridge.
2. Heat 2 tablespoons of olive oil in a large saucepan over a medium heat. Add the onion and garlic, and fry for 5-7 minutes, until softened. Add the ginger paste, cumin, coriander, garam masala, paprika, chilli powder and tomato purée, and fry for a further 2 minutes.
3. Add the passata, sugar, lemon juice, cream, salt and pepper. Bring to the boil, then reduce the heat and simmer for 10 minutes. Meanwhile, preheat the grill to a medium-high heat.
4. Place the marinated chicken cubes onto a baking tray and grill for 8-10 minutes, until cooked through. Add the chicken to the sauce and simmer for a further 5 minutes.
5. Serve the Chicken Tikka Masala with rice or naan bread. Enjoy!
