Ingredients
- 2 cups of boiled and mashed potatoes
- 1 tablespoon of chopped ginger
- 1 teaspoon of cumin seeds
- 1 teaspoon of mustard seeds

- 2 tablespoons of chilli powder
- 1 teaspoon of turmeric powder
- 2 tablespoons of oil
- 2 tablespoons of chopped green chillies
- 1/2 cup of chopped coriander leaves
- Salt to taste
- 8 buns
- 2 tablespoons of softened butter
- 2 tablespoons of garlic chutney powder
- 4 tablespoons of fried green chillies
- 4 tablespoons of tamarind chutney
- 4 tablespoons of green chutney
Instructions
To make the Vada, take the mashed potatoes in a bowl and add the chopped ginger, cumin seeds, mustard seeds, coriander powder, chilli powder, turmeric powder, oil, chopped green chillies, chopped coriander leaves and salt to taste. Mix everything together to make a dough-like consistency. Divide the dough into 8 equal parts and shape them into round patties. Heat a pan with oil over medium heat and shallow fry the patties until they are golden and crispy. Drain the patties on a paper towel to absorb the excess oil.
To assemble the Vada Pav, take the buns and cut them in half. Spread some softened butter on both sides of the buns and toast them in a toaster or on a pan until lightly golden. Now spread some garlic chutney powder on the inside of both halves. Place one patty in the centre of the bun and top it with some fried green chillies, tamarind chutney and green chutney. Place the other half of the bun on top and press gently. Serve the Vada Pav hot. Enjoy!
