Ingredients

  • Optional: 1/2 cup of cooked potatoes, green peas, or other vegetables

Instructions

This delicious dish can easily be made in a skillet in just 30 minutes. To get started, heat 2 tablespoons of oil in a large skillet over medium heat. Once the oil is hot, add the chopped onion and garlic, and sauté until the onion is soft and translucent, about 5 minutes. Then, add the cauliflower florets, ground coriander, cumin, garam masala, turmeric, cayenne pepper, and salt. Stir to combine and cook for another 5 minutes.

Next, add the diced tomatoes and 1/4 cup of water to the skillet. Bring the mixture to a boil, then reduce the heat to low and simmer until the cauliflower is tender and the sauce has thickened, about 10-15 minutes. Once the sauce has thickened, add the hard boiled eggs and stir to combine. Finally, add any optional vegetables you’d like, such as cooked potatoes and green peas. Simmer for 5 minutes, or until the vegetables are heated through.

Once everything is cooked and the sauce is thick, remove the skillet from the heat. Serve the Cauliflower Egg Curry with rice, naan, or your favorite Indian bread.
