BBC Good Food Bread and Butter Pudding

Ingredients
- 6 thick slices of white bread, crusts removed
- 75g butter, softened
- 75g golden caster sugar
- 2 large eggs
- 500ml full-fat milk
- 2 teaspoons vanilla extract
- 50g sultanas
- 50g raisins
- 2 tablespoons demerara sugar
Instructions
Preheat the oven to 190C/170C fan/gas 5. Grease a 1.5 litre baking dish with butter.
Spread the butter onto the slices of bread, then cut the bread into triangles. Arrange the triangles in the baking dish, overlapping them slightly. Sprinkle the golden caster sugar over the bread.
In a bowl, whisk together the eggs, milk, and vanilla extract. Pour the mixture over the bread and leave to stand for 15 minutes, until the bread has absorbed most of the liquid.
Sprinkle the sultanas and raisins over the top of the pudding, followed by the demerara sugar. Bake for 25-30 minutes, until golden brown and set. Serve hot or cold.
