3. In a separate bowl, mix together the melted butter, milk, apricot jam, vinegar and vanilla extract.
4. Add the wet ingredients to the dry ingredients and mix until just combined.
5. Pour the batter into the prepared baking dish and bake for 45 minutes.
6. To make the sauce, combine 1 cup of sugar and 1 cup of boiling water.
7. Stir in 2 tablespoons of butter and 1/2 teaspoon of vanilla extract.
8. Remove the pudding from the oven and pour the sauce over the top.
9. Serve warm or cold, with cream or ice cream, if desired.
