How To Make Lancashire Hotpot

Ingredients

If you want to make a delicious Lancashire Hotpot, you will need the following ingredients: 1.5 kg of lamb neck fillet, 500g of potatoes, 500g of onions, 2 carrots, 2 tablespoons of vegetable oil, 2 tablespoons of plain flour, 2 tablespoons of Worcestershire sauce, 2 tablespoons of tomato puree, 500ml of lamb stock, and salt and pepper for seasoning. You will also need a large oven-proof dish for baking.

Instructions

First, preheat the oven to 170°C. Next, cut the lamb neck fillet into small cubes and season with salt and pepper. Heat the vegetable oil in a large frying pan and brown the lamb cubes on all sides. Remove the lamb cubes from the pan and set aside. In the same pan, add the onions, carrots and potatoes and cook until they are lightly browned. Add the plain flour and mix together until it forms a paste. Add the Worcestershire sauce, tomato puree and lamb stock and mix together to form a thick sauce.

Transfer the vegetables to a large oven-proof dish and spread out evenly. Arrange the lamb cubes on top of the vegetables and pour over the sauce. Cover with a lid or foil and bake in the oven for 1.5 hours. Once the hotpot is cooked, remove from the oven and serve with fresh vegetables.

Nutrition

Lancashire hotpot is a nutritious and wholesome dish that is packed with protein, vitamins and minerals. Lamb is a great source of protein, as well as iron, zinc and B vitamins. Potatoes are a good source of vitamin C, potassium and fibre. The vegetables in the hotpot provide a range of vitamins and minerals, including vitamin A, C and K, as well as calcium and iron. The sauce is made with a stock which adds extra flavour and nutrition.

Serving Suggestions

Lancashire hotpot is best served with fresh vegetables such as peas, carrots and beans. It also goes well with a side of mashed potatoes or creamy mashed sweet potatoes. For a more traditional British meal, serve with a side of steamed cabbage or roasted Brussel sprouts. It is also delicious served with crusty bread or a side salad.

Tips and Tricks

If you want to give your hotpot an extra boost of flavour, try adding a few tablespoons of red wine or some fresh herbs such as thyme or rosemary. If you want to reduce the fat content of the dish, try using a leaner cut of lamb such as leg or shoulder. You can also use vegetable stock instead of lamb stock for a vegetarian version. Finally, for a richer flavour, try adding a tablespoon of beef dripping or butter to the sauce before baking.
