Easy Cornish Pasty Pie Recipe
An Introduction to Cornish Pasty Pie
Cornish pasty pie is a traditional British dish that has been around for centuries. It is a savory pastry filled with a variety of meats, vegetables, and seasonings, all encased in a flaky pastry crust. The origin of the pasty is believed to have come from Cornwall in the South West of England, hence the name. It was a favorite of the local miners, who would take them down into the mines as a meal. Today, it is still a popular dish in the UK, as well as in other parts of the world.
Ingredients
For the pastry:
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 2/3 cup cold butter
- 1/3 cup cold water
For the filling:
- 1/2 pound ground beef
- 1/2 cup diced potatoes
- 1/2 cup diced carrots
- 1/2 cup diced onion
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions
1. Preheat oven to 375°F.
2. To make the pastry, combine the flour and salt in a large bowl. Cut in the butter until the mixture resembles coarse crumbs. Slowly add the cold water, stirring with a fork until the dough comes together.
3. Divide the dough in half and roll each half out until it is about 1/8 inch thick. Cut each half into 4 equal pieces.
4. To make the filling, combine the beef, potatoes, carrots, onion, salt and pepper in a bowl. Mix until evenly combined.
5. Place a piece of pastry on a lightly floured surface and spoon 1/4 of the filling onto one half of the pastry. Fold the other half over the top and press the edges together to seal. Cut a few slits in the top of the pastry to allow steam to escape. Repeat with the remaining pieces of pastry.
6. Place the pasties on a baking sheet and bake for 25-30 minutes, or until golden brown. Allow to cool before serving.
