Instructions



1. Preheat your oven to 400°F (200°C).

2. Place the salmon fillets on a baking sheet and season with salt and pepper. Drizzle each fillet with the olive oil, and bake in the oven for 15 to 20 minutes, until the salmon is cooked through.

3. In a small bowl, mix together the Dijon mustard, mayonnaise, chives, Parmesan cheese, and bread crumbs.

4. Cut the puff pastry sheets into four equal pieces. Place a piece of cooked salmon in the center of each piece of puff pastry. Top the salmon with the mustard-mayo mixture.

5. Fold the puff pastry up and around the salmon to form a sealed package. Place the packages on a baking sheet and bake in the oven for 15 to 20 minutes, until the pastry is golden brown.

6. Let the Salmon Wellington cool completely before freezing.

Freezing and Reheating



Once the Salmon Wellington has cooled, wrap each one individually in plastic wrap. Place the wrapped Salmon Wellington in a freezer bag and place it in the freezer.
