Ingredients

  • 1 cup packed light-brown sugar
  • 1/2 cup heavy cream
  • 1/2 cup (1 stick) unsalted butter

  • 1/2 cup plus 2 tablespoons whipping cream
  • 2 tablespoons confectioners' sugar
  • 1/2 teaspoon freshly grated nutmeg
  • 2 ounces (1/4 cup) bittersweet chocolate, finely chopped

Instructions

To begin, preheat the oven to 350°F. Grease an 8-inch round cake pan with butter, line the bottom and sides with parchment paper, and grease the parchment. Roll out the pastry dough to a thickness of 1/8 inch and fit it into the prepared pan. Prick the bottom of the pastry with a fork and bake for 15 minutes, or until golden brown. Remove from the oven and set aside to cool.

Next, combine the brown sugar, cream, butter, and vanilla in a medium saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer, stirring occasionally, until the mixture is thick and creamy, about 10 minutes. Remove from the heat and cool for 10 minutes.

Meanwhile, slice the bananas and layer them on top of the cooled pastry. Pour the cooled caramel over the bananas and spread evenly. Place the pan in the refrigerator to cool while you prepare the topping.

In a medium bowl, whip the cream until soft peaks form. Add the confectioners’ sugar, nutmeg, and chopped chocolate and continue to whip until stiff peaks form. Spread the whipped cream over the cooled caramel layer. Place the pan in the refrigerator for at least 2 hours before serving.
