Ingredients

- 250g butter, softened
- 250g caster sugar
- 4 large eggs
- 250g self-raising flour
- Zest of 2 lemons

- 150g icing sugar

Instructions



Start by preheating your oven to 180°C (160°C fan). Grease and line an 8-inch round cake tin.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time and mix until fully incorporated. Sift in the self-raising flour and mix until just combined.

Stir in the lemon zest and juice and mix until fully incorporated. Pour the mixture into the prepared cake tin and bake for 25-30 minutes until golden brown and a skewer inserted into the centre comes out clean.

In a small bowl, mix together the icing sugar and remaining lemon juice to make a thick drizzle. Once the cake has cooled slightly, pour the drizzle over the top of the cake and allow to cool completely.
