6 Flavour Pani Puri Recipe
Pani Puri or golgappa is one of the most popular and loved street foods in India. It is a type of chaat that is made up of crispy puris, filled with a mixture of mashed potatoes and spices, and then topped with a tangy and spicy liquid. The combination of textures and flavours makes it irresistible. It is often served as an appetizer or as a snack.
This Pani Puri recipe is a delicious variation with six different flavour options. It is easy to make and is sure to be a hit with family and friends.
Ingredients
For the Puri:
- 2 cups all-purpose flour
- 1 teaspoon of cumin seeds
- 1 teaspoon of salt
- 2 tablespoons of oil
- Water as needed
For the Potato Filling:
- 2 potatoes, boiled and mashed
- 2 tablespoons of coriander leaves, chopped
- 1 teaspoon of cumin powder
- 1 teaspoon of red chilli powder
- 1/2 teaspoon of chaat masala
- 1 teaspoon of black salt
- 1/2 teaspoon of garam masala
- 2 tablespoons of oil
- Salt to taste
For the Pani:
- 4 cups of water
- 2 tablespoons of mint leaves, chopped
- 2 tablespoons of coriander leaves, chopped
- 2 green chillies, chopped
- 2 tablespoons of tamarind paste
- 1 teaspoon of cumin powder
- 1 teaspoon of black salt
- 2 tablespoons of jaggery
- 2 tablespoons of chaat masala
- Salt to taste
For the 6 Flavours:
- 2 cups of pani
- Juice of 1 lemon
- 2 tablespoons of chopped ginger
- 2 tablespoons of chopped garlic
- 2 tablespoons of chopped coriander leaves
- 2 tablespoons of chopped mint leaves
- 2 tablespoons of green chilli paste
Instructions
Making the Puri
In a large bowl, add the flour, cumin seeds, salt, and oil. Mix it well and then add the water as needed and knead the dough until it is smooth and pliable. Cover the dough with a damp kitchen towel and let it rest for about 20 minutes.
Divide the dough into small portions and roll them into thin discs. Heat oil in a pan and deep fry the discs until they are golden and crispy. Drain them on a paper towel and let them cool.
Making the Potato Filling
Heat oil in a pan and add the mashed potatoes, coriander leaves, cumin powder, chilli powder, chaat masala, black salt, and garam masala. Mix it well and cook it for 2 minutes.
Remove it from the heat and let it cool.
Making the Pani
In a blender, add the water, mint leaves, coriander leaves, green chillies, tamarind paste, cumin powder, black salt, jaggery, chaat masala, and salt. Blend it until it is smooth.
Strain the mixture and transfer it to a bowl.
Making the 6 Flavours
Take 2 cups of pani and divide it into 6 bowls. In each bowl, add one of the following ingredients: lemon juice, ginger, garlic, coriander leaves, mint leaves, and green chilli paste.
Mix it well and your 6 flavours of pani are ready.
Assembling the Pani Puri
Take a puri and make a hole in the centre. Fill it with the potato filling and then dip it in one of the 6 flavour pani. Serve it immediately.
