Lamb Mince Shepherd’s Pie Recipe

Ingredients

This delicious and comforting shepherd’s pie recipe is sure to please the whole family. To make it, you’ll need: 1 tablespoon of oil, 500g of lean lamb mince, 1 onion, 2 cloves of garlic, 1 carrot, 1 stick of celery, 1 teaspoon of tomato puree, 1 tablespoon of Worcestershire sauce, 200ml of beef stock, 2 tablespoons of plain flour, 1 tablespoon of fresh thyme leaves, 250g of frozen peas, 2 tablespoons of freshly chopped parsley, and 500g of mashed potatoes.

Instructions

Heat the oil in a large non-stick frying pan over a medium heat. Add the lamb mince and cook for 5 minutes, stirring regularly, until it’s browned. Add the onion, garlic, carrot, and celery, and cook for a few more minutes. Add the tomato puree, Worcestershire sauce, and beef stock, and bring to the boil. Reduce the heat and simmer for 10 minutes, or until the liquid has reduced by half. Then stir in the flour and thyme leaves, and cook for a few minutes until the sauce has thickened. Add in the frozen peas and parsley, and season to taste with salt and pepper.

Preheat the oven to 200°C (180°C fan). Transfer the lamb mince mixture to an ovenproof dish and top with the mashed potatoes. Place the dish in the oven and bake for 30 minutes, or until the potatoes are golden brown. Serve with your favourite vegetables.
