• 2 tablespoons all-purpose flour
• 2 cups beef broth
• 1 teaspoon Worcestershire sauce
• 2 tablespoons chopped fresh parsley leaves
• 2 tablespoons chopped fresh thyme leaves
• 2 cups cooked or canned green peas
• 2 tablespoons unsalted butter
• 1 1/2 pounds Russet potatoes, peeled and cut into 1-inch cubes
• 1/2 cup heavy cream
• Kosher salt and freshly ground black pepper

Instructions

1. Preheat the oven to 375°F.

2. Heat the olive oil in a large skillet over medium heat. Add the onions and garlic and cook for 5 minutes, stirring occasionally, until the onions are softened.

3. Add the ground beef and cook for 8 minutes, stirring occasionally, until the beef is cooked through. Add the tomato paste, flour, beef broth, Worcestershire sauce, parsley, and thyme and cook for 5 minutes, stirring occasionally, until the mixture has thickened. Add the peas and stir to combine.

5. Meanwhile, melt the butter in a large pot over medium heat. Add the potatoes and cook for 10 minutes, stirring occasionally, until the potatoes are softened. Add the cream and bring to a simmer. Reduce the heat to low and cook for 5 minutes, stirring occasionally, until the potatoes are very tender.

6. Remove the pot from the heat and mash the potatoes until smooth. Season with salt and pepper, to taste.
