Ingredients

2 large potatoes, cut into cubes, 2 large aubergines, cut into cubes, 2 tablespoons of vegetable oil, 2 medium onions, finely chopped, 2 cloves of garlic, finely chopped, 1 teaspoon of ground ginger, 1 teaspoon of ground cumin, 2 teaspoons of ground coriander, 2 teaspoons of garam masala, 2 tablespoons of tomato puree, 1 teaspoon of turmeric, and 1 teaspoon of chilli powder, 1 teaspoon of salt and 400ml of water.

Instructions

To begin, heat the oil in a large pan over a medium heat. Add the onions and garlic, and fry until they are lightly golden. Then add the ground ginger, cumin, coriander, garam masala, tomato puree, turmeric, chilli powder and salt, and fry for another few minutes, stirring frequently.
Next, add the potatoes and aubergines, and stir to combine. Pour in the water and bring to a boil. Reduce the heat to low, cover the pan and simmer for 25 minutes, or until the potatoes and aubergines are cooked through.
Once the vegetables are cooked, remove the pan from the heat and allow to cool for a few minutes before serving. Enjoy!
