Ingredients

  • 1 cup urad dal (split black lentils)
  • 1 teaspoon salt
  • 2 teaspoons ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder
  • 2 tablespoons chopped fresh coriander leaves
  • 1 teaspoon dried mango powder (amchur)
  • 3 cups water
  • 1 cup plain yogurt
  • 2 tablespoons sugar
  • 1 teaspoon cumin seeds
  • 1 teaspoon black mustard seeds
  • 2 tablespoons vegetable oil
  • 2-3 whole dried red chilies
  • 1 teaspoon garam masala
  • 1 teaspoon chaat masala
  • 1 teaspoon black salt

Instructions

Begin by soaking the urad dal in three cups of water for at least two hours. After the lentils have soaked, drain the water and transfer the lentils to a blender. Add the salt, ginger-garlic paste, cumin powder, coriander powder, red chili powder, and chopped fresh coriander leaves to the blender and blend until the mixture is smooth and creamy.

Transfer the batter to a large bowl and add the dried mango powder and a tablespoon of vegetable oil. Mix thoroughly. Heat a steamer and grease the steamer plate with a bit of oil. Take a tablespoon of the batter and drop it into the steamer plate, repeating this process until all the batter is used. Steam the vadas for 10-12 minutes, or until they are cooked through.

Once the vadas are cooked, remove them from the steamer and let them cool. Once cooled, cut each vada into two halves. Take a large bowl and add the yogurt, sugar, cumin seeds, black mustard seeds, two tablespoons of vegetable oil, whole dried red chilies, garam masala, chaat masala, and black salt. Mix together until all the ingredients are combined.

Add the vadas to the yogurt mixture and mix together until all the vadas are evenly coated. Let the vadas sit in the yogurt mixture for at least an hour. Serve the Dahi Vadas chilled, topped with some of the remaining yogurt mixture and a sprinkle of chaat masala. Enjoy!
