Aloo paratha is a popular Indian flatbread that is loved by people of all ages. It is made with whole wheat flour, potatoes and spices, and can be served with a variety of accompaniments such as yogurt, pickles, and chutneys. This recipe is created by Sanjeev Kapoor, a renowned Indian chef and restaurateur. This delicious and healthy snack is sure to be a hit with your family and friends.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida (hing)
  • 1/4 teaspoon turmeric
  • 1 cup boiled and mashed potatoes
  • 1/4 cup chopped coriander leaves
  • Oil for cooking

Instructions

In a large bowl, mix together the wheat flour and salt. Add the oil and mix it thoroughly. Add 1/2 cup of lukewarm water and knead it into a soft dough. Cover and let it rest for 20 minutes.

In a medium bowl, mix together the cumin seeds, asafoetida, turmeric, boiled and mashed potatoes, and chopped coriander leaves. Mix well and set aside.

Divide the dough into 8 equal portions and roll each portion into a small ball. Take one ball and roll it into a 3-inch diameter circle. Place 2 tablespoons of the potato mixture in the center of the circle. Fold the edges of the circle towards the center and seal the edges. Roll it into a 6-inch diameter paratha.

Heat a griddle or tawa over medium heat. Place the paratha on the hot griddle and cook for 1-2 minutes. Flip it over and cook for another 1-2 minutes. Apply a little oil or ghee on both sides and cook for another 1-2 minutes on each side until both sides are golden brown.

Serve the hot aloo paratha with yogurt, pickles, and chutneys.
