Instructions

To make the paratha dough: In a large bowl, mix together the flour, salt, and oil. Slowly add the warm water, a little at a time, and knead the dough until it is soft and pliable. Cover the dough and set aside for 15-20 minutes. To make the filling: Heat the oil in a pan over medium heat. Add the cumin seeds and fry for 30 seconds. Add the mashed potatoes and all the spices and mix well. Cook for 5 minutes, stirring continuously. Add the cilantro leaves and mix well. Remove from heat and set aside. To assemble the paratha: Take a portion of the dough and roll it into a ball. Flatten the dough and roll it out into a circle. Place a portion of the filling in the center of the dough and bring the edges together to form a ball. Flatten the ball and roll it out into a circle. Heat a griddle over medium heat and place the paratha on the griddle. Cook for a few minutes until the bottom is golden brown. Flip the paratha and cook the other side for a few minutes until it is golden brown. Serve the aloo paratha hot with yogurt, pickles, and chutney.
