• 175g chopped dates
• 175g butter, plus extra for greasing
• 175g self-raising flour
• 1 teaspoon baking powder
• 175g golden caster sugar

• 2 tablespoons black treacle

• 175g golden caster sugar
• 175g butter
• 150ml double cream
• For the custard:
• 500ml semi-skimmed milk
• 1 vanilla pod, split and seeds scraped out
• 3 egg yolks
• 75g golden caster sugar
• 25g cornflour

Instructions



To make this sticky toffee pudding recipe from Tesco, start by preheating the oven to 180°C (160°C fan)/gas mark 4. Grease a deep 20cm square cake tin with butter and line the bottom with baking paper.

Put the dates in a small bowl and pour over 150ml of boiling water. Leave to soak for 10 minutes, then drain and set aside.

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Sift in the flour and baking powder and stir to combine. Add the milk, treacle and drained dates and fold together until evenly mixed.

To make the toffee sauce, put the sugar and butter in a medium saucepan and heat over a low heat until the butter has melted and the sugar has dissolved. Increase the heat and bring to the boil, stirring constantly, for 2–3 minutes until the sauce has thickened and is golden in colour. Remove from the heat and stir in the cream.

To make the custard, pour the milk into a medium saucepan and add the vanilla pod and seeds. Heat until almost boiling, then remove from the heat. In a medium bowl, whisk together the egg yolks and sugar until pale and thick. Gradually whisk in the cornflour until smooth. Gradually pour in the hot milk, whisking constantly, then pour back into the pan. Cook over a low heat, stirring constantly, until the custard thickens. Remove from the heat and strain through a sieve.

Once the pudding is cooked, leave to cool for a few minutes, then turn out onto a serving plate. Cut into squares and serve with the toffee sauce and custard.
