Add the ghee or oil to the bowl and mix it with the flour and spices until it is evenly distributed. Start adding the water in small quantities and knead the mixture to form a soft dough. Cover the dough with a damp cloth and let it rest for 10 minutes.

Divide the dough into equal portions. Roll each portion into a thin circle of approximately 6-7 inches in diameter. Heat a tawa or griddle and place the roti on it. Cook on medium heat for a few seconds, until the base is lightly browned. Flip the roti and cook the other side as well until it is light brown.

Brush the top of the roti with a bit of ghee or oil and cook for a few more seconds. Flip the roti and cook the other side as well. Remove the roti from the tawa and serve hot with accompaniments of your choice.
