Minced Lamb And Rice Recipes

Ingredients
For this recipe you will need the following ingredients: 200g of minced lamb, 1 onion, 1 garlic clove, 1 teaspoon of ground cumin, 1 teaspoon of paprika, 1 teaspoon of ground coriander, 1 teaspoon of chilli powder, 200g of long grain rice, 500ml of vegetable stock, 1 tablespoon of tomato purée, 1 teaspoon of oregano, salt and pepper, 1 tablespoon of olive oil, 1 red pepper, 1 yellow pepper, 1 green pepper, 1 large carrot, and a handful of fresh parsley.
Instructions
Firstly, heat the olive oil in a large pan over a medium heat. Add the minced lamb and cook until it is browned. Then add the onion, garlic, and all the spices, and cook for a few minutes until the onion is softened. Next, add the rice and stir to combine with the lamb. Then add the vegetable stock and tomato purée, and bring to the boil. Once boiling, reduce the heat and simmer for 15 minutes, stirring occasionally.
Meanwhile, prepare the vegetables by chopping the peppers, carrot and parsley. Add the vegetables to the pan and cook for a further 10 minutes until the vegetables are cooked through and the rice is tender. Finally, season with salt and pepper and garnish with the parsley.
Serving
