Ingredients
- 175g self-raising flour
- 175g caster sugar
- 175g butter, softened
- 3 large eggs
- Grated zest of 2 lemons
- 2 tablespoons lemon juice

- For the drizzle:
- 3 tablespoons caster sugar
- Juice of 2 lemons
Instructions
1. Preheat your oven to 180C/160C Fan/Gas 4. Grease and line a 2lb/900g loaf tin.
2. In a large bowl, beat together the butter and caster sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each addition. Add the lemon zest and juice, and mix again.
3. Sift the flour into the bowl, and fold it in. Add the milk, and mix until you have a smooth batter. Spoon the batter into the prepared tin and level the top.
4. Bake for 45 minutes to 1 hour, or until a skewer inserted into the centre comes out clean. Leave the cake in the tin for 10 minutes, then turn it out onto a wire rack.
5. To make the drizzle, mix the caster sugar and lemon juice together, and then spoon it over the top of the warm cake. Allow the cake to cool completely before serving.
