1. In a large bowl, combine the chicken cubes and cornstarch. Toss to coat the chicken. Set aside.

2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook, stirring occasionally, until the chicken is cooked through, about 5 minutes. Remove the chicken from the pan and set aside.
