Ingredients

Instructions

Once the vegetables are softened, add the flour, mustard, and season with black pepper. Stir to combine, then pour in the chicken stock and add the crème fraîche. Simmer for 10 minutes until the sauce has thickened. Remove the pan from the heat and leave to cool slightly.
To make the pastry, sift the flour into a bowl and add the butter and salt. Rub the butter into the flour until the mixture resembles fine breadcrumbs. Make a well in the centre of the flour and gradually add the water, mixing with a round-bladed knife until a dough is formed. Turn out the dough onto a lightly floured surface and knead lightly. Roll out the pastry to a thickness of 5mm and use to line the pie dish. Spoon the filling into the pie dish and brush the edges of the pastry with a little beaten egg. Roll out the remaining pastry and use to cover the pie. Trim off the excess pastry and crimp the edges to seal.
Place the pie on a baking tray and brush the top with more beaten egg. Bake in a preheated oven at 200°C for approximately 30 minutes until golden brown. Serve with mashed potatoes and your favourite vegetables.
