Chicken Leek And Mushroom Pie Mary Berry



Mary Berry’s Chicken Leek and Mushroom Pie is a delicious dish that's perfect for a family meal. It's a classic recipe that's easy to prepare and can be enjoyed by everyone. This pie is filled with succulent chicken, leeks, mushrooms, and creamy sauce, all encased in a golden, flaky pastry.

Ingredients

For the Pie Pastry:

  • 200g plain flour
  • 100g butter
  • 2-3 tablespoons cold water
  • 1 egg for egg wash

For the Filling:

  • 3 tablespoons olive oil
  • 2 large leeks, sliced
  • 2 cloves garlic, finely chopped
  • 200g button mushrooms, sliced
  • 400g cooked, shredded chicken
  • 2 tablespoons plain flour
  • 200ml chicken stock
  • 2 tablespoons double cream
  • Salt and freshly ground black pepper

Instructions

Making the Pie Pastry

In a large bowl, mix together the flour and butter until it resembles breadcrumbs. Add the cold water and mix until it forms a dough. Wrap the pastry in cling film and place in the fridge to rest for 30 minutes. Preheat the oven to 200°C/180°C fan/Gas 6.

Making the Filling

Heat the oil in a large frying pan and add the leeks, garlic and mushrooms. Cook for 5 minutes until softened. Add the chicken and cook for a further 5 minutes. Add the flour and stir well. Gradually add the stock, stirring continuously until the sauce thickens. Add the cream and season with salt and pepper. Remove from the heat and set aside.

Assembling the Pie

Roll out two-thirds of the pastry on a lightly floured surface and use it to line a 20cm pie dish. Fill the dish with the chicken and leek mixture and brush the edges of the pastry with egg wash. Roll out the remaining pastry and place it over the top of the pie. Crimp the edges and brush the top with egg wash.

Baking the Pie

Bake in the preheated oven for 30-35 minutes until golden and crisp. Serve hot with your favourite vegetables.
