Banoffee Pie Recipe Digestive Biscuits
Ingredients
For the base of this classic British dessert, you will need: 250g of digestive biscuits, 75g of butter, melted, and 1 can of Carnation Caramel (397g). For the filling, you will need: 3 large ripe bananas, 200ml of double cream, 1 teaspoon of vanilla extract and 4 tablespoons of icing sugar. Lastly, for the topping, you will need: 200g of dark chocolate, melted.
Instructions
Start by preheating your oven to 180C/160Fan/Gas 4. Line a 9” round springform cake tin with baking parchment. Place the digestive biscuits into a food processor and blitz until they resemble breadcrumbs. Add the melted butter and pulse until the mixture resembles wet sand. Tip the biscuit crumbs into the prepared tin and press down firmly to create an even base. Bake in the preheated oven for 10 minutes, then remove and allow to cool completely. Open and pour the caramel into the cooled biscuit base. Slice the bananas and arrange on top of the caramel, covering the entire surface. In a bowl, beat the cream, vanilla and icing sugar together until thick and pipeable. Pipe the cream onto the banana slices and level out with a palette knife. Finally, pour the melted chocolate over the cream layer and spread to cover. Place in the fridge for 2 hours, or until the chocolate is set. Serve and enjoy!
