The Hogwarts Steak And Kidney Pie is a well-known recipe that originated in the magical wizarding world of Harry Potter. Ingredients

For the pastry:

  • 200g plain flour
  • 1 teaspoon salt
  • 100g butter
  • 1 egg
  • 50ml cold water
For the filling:
  • 500g steak
  • 200g lamb’s kidney
  • 2 onions
  • 2 cloves of garlic
  • 1 teaspoon of thyme
  • 1 teaspoon of rosemary
  • 2 tablespoons of plain flour
  • 100ml red wine
  • 250ml beef stock
  • 1 tablespoon of tomato puree

Instructions

Making the pastry

Start by making the pastry. Sift the flour and salt into a large bowl and rub the butter into the flour until it resembles breadcrumbs. Add the egg and cold water and mix together until you have a firm pastry dough. Wrap the pastry in cling film and chill in the fridge for at least an hour before you use it.

Making the filling

Cut the steak and kidney into bite-sized pieces and set aside. Peel and finely chop the onions and garlic and fry gently in a large pan with some oil until the onions are golden and softened. Add the steak and kidney pieces to the pan with the thyme and rosemary and season with salt and pepper. Cook the steak and kidney for a few minutes until they are lightly browned. Add the flour to the pan and stir to coat the steak and kidney. Pour in the red wine and beef stock and bring to the boil, then reduce the heat and simmer for 15 minutes. Stir in the tomato puree and cook for a few minutes more. Remove the pan from the heat and let the steak and kidney filling cool.

Assembling the pie

Preheat the oven to 180°C. Grease a large pie dish and roll out two thirds of the pastry to line the base and sides of the dish. Pour in the steak and kidney filling and spread it out evenly. Roll out the remaining pastry and use it to cover the top of the pie. Trim off the excess pastry and use a fork to crimp the edges. Make a small hole in the centre of the pastry to allow the steam to escape. Brush the top of the pastry with some beaten egg and bake in the preheated oven for 45 minutes until golden brown. Serve the pie with some mashed potatoes and vegetables.
