Ingredients

  • 2 cups all-purpose flour

  • 1/4 cup plain yogurt
  • 1/4 cup milk
  • 2 tablespoons vegetable oil

Instructions

Start by combining the dry ingredients in a large bowl. Mix them together to combine. In a separate bowl, whisk together the yogurt, milk, and oil. Add this to the dry ingredients and mix until you have a soft dough. Knead the dough for 3-5 minutes, until it is smooth and elastic. Cover the bowl with plastic wrap and set it aside in a warm place to rise for 1-2 hours, or until doubled in size.

Once the dough has doubled in size, turn it out onto a lightly-floured surface. Knead it for 2-3 minutes, then divide it into 8-10 equal pieces. Roll each piece into a ball, then flatten it into a disc about 1/4 inch thick. Cover the discs with a damp cloth and let them rest for 10-15 minutes before frying.

To fry the bhaturas, heat 2-3 inches of oil in a deep skillet over medium-high heat. When the oil is hot, gently drop a bhatura into the oil. Fry it until it is golden brown, then flip it and fry the other side. Remove the bhatura and place it on a paper towel-lined plate to drain the excess oil. Repeat with the remaining bhaturas.
