Ingredients

• 500g ground beef
• 1 onion, minced
• 2 cloves garlic, minced
• 2 tablespoons fresh parsley, chopped
• 2 tablespoons fresh mint, chopped
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1 teaspoon salt
• 1 teaspoon black pepper
• 4 tablespoons olive oil
• 1 red pepper, sliced
• 1 yellow pepper, sliced
• 4 courgettes, sliced
• 3 tablespoons balsamic vinegar
• 2 tablespoons honey

Instructions

1. Preheat oven to 200C/400F.

2. In a large bowl, mix together the ground beef, onion, garlic, parsley, mint, cumin, coriander, salt, and pepper until well combined. Take a handful of the mixture and shape it into a ball. Repeat with the rest of the mixture until all the mixture has been used.

3. Place the beef kofta balls onto a baking tray lined with parchment paper. Drizzle with 2 tablespoons of olive oil and bake in the preheated oven for 15 minutes.

4. While the kofta balls are baking, heat the remaining 2 tablespoons of olive oil in a large skillet over a medium-high heat. Add the red pepper, yellow pepper, and courgettes to the pan and cook for 5 minutes, stirring regularly.

5. Once the kofta balls have finished cooking, add them to the skillet and cook for a further 5 minutes.

6. In a small bowl, mix together the balsamic vinegar and honey. Pour the mixture over the kofta kebab and cook for a further 5 minutes, stirring regularly.
