Ingredients
For the bara brith recipe with marmalade, you’ll need 500g of strong white bread flour, 7g sachet of fast-action dried yeast, 50g of caster sugar, 2 teaspoons of ground mixed spice, 1 teaspoon of ground cinnamon, 1 teaspoon of ground nutmeg, 2 large eggs, 100ml of semi-skimmed milk, 120ml of vegetable oil, 2 tablespoons of marmalade, and 2 tablespoons of sultanas.
Instructions
The first step in making the bara brith with marmalade is to preheat your oven to 200°C/400°F/Gas Mark 6. Then, in the bowl of a stand mixer, add the bread flour, yeast, caster sugar, mixed spice, cinnamon, and nutmeg. Use the dough hook attachment to mix all of the ingredients together.
Once the dry ingredients are combined, add in the eggs, milk, and vegetable oil. Mix the ingredients together until they form a soft dough. You may need to add a little extra flour if the dough is too wet.
Next, turn the dough out onto a lightly floured work surface and knead it for 10 minutes until it becomes smooth and elastic. Once the dough is ready, add the marmalade and sultanas and knead them into the dough.
Grease a 2lb loaf tin and line it with baking parchment. Place the dough in the tin and leave it to prove in a warm place for 1 hour or until the dough has doubled in size.
