Ingredients
To make this Bakewell Tart, you will need:
- 200g plain flour
- 100g cold butter, diced
- 100g caster sugar
- 2 medium eggs
- 3 tablespoons of ground almonds
- 2 teaspoons of almond extract
- 4 tablespoons of raspberry jam
Instructions
Step 1
To start, preheat your oven to 190C/170C fan/gas 5. Take a 20cm loose-bottomed tart tin and lightly grease it.

In a large bowl, mix the flour and butter together with your fingertips until it resembles fine breadcrumbs. Stir in the sugar, then mix in the eggs until it forms a soft dough. Wrap in clingfilm and leave to rest in the fridge for 15 minutes.

Roll out the pastry on a lightly floured surface until it is large enough to line the tart tin. Press the edges carefully into the corners of the tin, then trim off any excess pastry. Prick the base with a fork, then line with baking parchment and fill with baking beans. Bake the pastry blind for 10 minutes.

In a medium bowl, mix the ground almonds, almond extract and remaining egg together until it forms a thick paste. Spread the raspberry jam on the pastry base, then spoon the almond mixture on top. Bake for a further 25 minutes until golden brown.
