What is Bara Brith?

Ingredients


-2 cups flour
-1 teaspoon baking soda
-1/2 teaspoon salt
-1/2 cup butter, melted
-1/2 cup honey
-1 teaspoon ground cinnamon
-1/2 teaspoon ground nutmeg
-1/2 teaspoon ground allspice
-1/2 cup dark raisins
-1/2 cup currants
-1/2 cup finely chopped dried apricots
-1/2 cup chopped dates
-1/2 cup chopped figs
-1/2 cup chopped prunes
-1/2 cup chopped walnuts
-1/2 cup chopped almonds
-1/2 cup chopped hazelnuts
-1/2 cup chopped mixed peel
-1/2 cup mixed candied fruit
-1/2 cup brewed, cooled tea
-1/4 cup rum
-3 tablespoons demerara sugar

Instructions


1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.

2. In a large bowl, mix together the flour, baking soda and salt. In a separate bowl, combine the melted butter and honey. Add the cinnamon, nutmeg and allspice to the butter and honey mixture.

3. In a third bowl, combine the dark raisins, currants, apricots, dates, figs, prunes, walnuts, almonds, hazelnuts, mixed peel, mixed candied fruit, brewed tea, rum and demerara sugar.

4. Add the wet ingredients to the dry ingredients and mix well.

5. Pour the batter into the prepared loaf pan and bake for 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean.

6. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
