Lemon Drizzle Cake – Gluten Free Recipe

Ingredients
- 200g gluten-free self-raising flour
- 150g caster sugar
- 2 large eggs
- 150g butter, melted
- 1 lemon, zested and juiced
- 3 tablespoons of caster sugar for the drizzle
Instructions
Making the Cake
Preheat your oven to 180C/350F/Gas Mark 4. Grease a 18cm/7in round cake tray and set aside.
In a large bowl, combine the gluten-free flour, caster sugar, eggs, melted butter, lemon zest and juice. Mix until all the ingredients are combined and the mixture is smooth.
Pour the mixture into the prepared cake tray and bake in the oven for 25-30 minutes. Check the cake is cooked by inserting a skewer into the centre. If it comes out clean, the cake is ready.
Making the Drizzle
Once the cake is cooked, remove from the oven and leave to cool in the tray for 10 minutes. While cooling, make the drizzle by combining the caster sugar and 2 tablespoons of lemon juice in a small bowl. Once combined, pour the mixture over the top of the cake.
Allow the cake to cool completely before slicing and serving.
