BBC Chicken and Mushroom Pie Recipe
Ingredients
For the pie:
- 500g chicken thigh fillets, cut into bite-size chunks
- 2 tablespoons olive oil
- 2 large onions, chopped
- 2 garlic cloves, minced
- 500g mushrooms, sliced
- 2 tablespoons plain flour
- 2 tablespoons fresh thyme leaves
- 300ml chicken stock
- 4 tablespoons double cream
- Salt and freshly ground black pepper
- 2 sheets of ready-rolled puff pastry
- 1 beaten egg, for glazing
Instructions
1. Preheat the oven to 200°C/Gas Mark 6.
2. Heat the oil in a large frying pan over a medium heat, then add the chicken and fry for 4-5 minutes until lightly golden. Remove from the pan and set aside.
3. Add the onions and garlic to the pan and fry for a few minutes until softened. Then add the mushrooms and fry for a further few minutes until they have softened and any liquid has evaporated.
4. Return the chicken to the pan and sprinkle over the flour and thyme. Stir well to combine, then pour in the stock and bring to the boil. Simmer for around 10 minutes until the sauce has thickened.
5. Add the cream and season with salt and pepper. Remove from the heat and set aside.
6. Cut out two circles of puff pastry, one slightly bigger than the other. Place the smaller one into a greased baking tin and spoon in the chicken and mushroom mixture. Wet the edges of the pastry, then place the larger pastry circle on top and press down gently to seal.
7. Brush the top of the pastry with the beaten egg and bake in the oven for 25-30 minutes until golden and crisp.
8. Serve with a fresh salad.
