Ingredients

Preparing the Ambur Biryani Masala Powder is not a difficult task, but it does require some time and patience. To make the perfect Ambur Biryani Masala Powder, you’ll need the following ingredients: coriander seeds, cumin seeds, black peppercorns, cinnamon, cloves, cardamom, bay leaves, black cardamom, dry red chillies, and fennel seeds. You’ll also need a spice grinder, a fine sieve and a bowl.

Instructions

The first step in making Ambur Biryani Masala Powder is to dry roast the spices. Heat a pan over medium-low heat, and add the coriander seeds, cumin seeds, black peppercorns, cinnamon, cloves, cardamom, bay leaves, black cardamom and dry red chillies. Roast the spices for a few minutes until they are lightly browned and fragrant. Be careful not to burn them. Once the spices are roasted, remove them from the pan and set aside to cool.

Once the spices are cool, add them to a spice grinder and grind them until it becomes a fine powder. Sieve the powder into a bowl to remove any lumps or large pieces of spices. Once the powder is sieved, your Ambur Biryani Masala Powder is ready!
