Nigella Lawson Coffee and Walnut Cake
Ingredients:
One of the all-time favorite combinations, the combination of coffee and walnuts is a classic. This cake from the famous cook Nigella Lawson is sure to delight everyone. To make this delicious dessert, you’ll need:
- 200g of unsalted butter
- 200g of light muscovado sugar
- 3 large eggs
- 200g of self-raising flour
- 2½ teaspoons of instant coffee powder
- 150ml of milk
- 50g of walnuts
- 50g of icing sugar
- 2 tablespoons of cold water
Instructions:
Preheat your oven to 180°C (350°F). Grease and line an 18 cm (7 inch) round cake tin. Put the butter and the muscovado sugar into a bowl and beat until light and fluffy. Gradually beat in the eggs, one at a time, adding a spoonful of the flour with each one to stop the mixture from curdling. Sieve in the rest of the flour and fold in gently with a metal spoon. Dissolve the coffee powder in the milk and add to the mixture, again folding in gently. Finally, chop the walnuts and stir into the mixture.
Pour the mixture into the tin and bake for about 45 minutes or until a skewer inserted into the centre of the cake comes out clean. Leave the cake to cool in the tin for a few minutes, then turn out onto a wire rack and leave to cool completely. To make the coffee icing, dissolve the coffee powder in the cold water, then sieve the icing sugar into a bowl and stir in the dissolved coffee. Add enough cold water to make a spreadable consistency. Spread the icing over the top of the cake and decorate with walnuts.
