To prepare Dum Biryani, you need the following ingredients: 2 cups of basmati rice, 2 cups of mixed vegetables (cauliflower, potatoes, carrots, beans, and peas), 1 onion, 4 cloves of garlic, 1 teaspoon of ginger paste, 1 teaspoon of cumin seeds, 1 teaspoon of garam masala, 1 teaspoon of coriander powder, 1 teaspoon of turmeric powder, 1/2 teaspoon of red chilli powder, 1/4 teaspoon of black pepper, 1/4 cup of ghee, 1 tablespoon of lemon juice, 1/4 cup of chopped coriander leaves, 2 tablespoons of chopped mint leaves, 1/4 cup of cashew nuts, 1/4 cup of raisins, 2 tablespoons of butter, 1/2 teaspoon of cardamom powder, 2 cups of water, and salt to taste.

Instructions


To begin, wash the rice and soak in cold water for 30 minutes. Meanwhile, prepare the vegetables by cutting them into small pieces. In a large pot, heat the ghee and add the cumin seeds, ginger paste, garlic, and onion. Fry until the onions are golden brown. Add in the vegetables and fry for a few minutes. Then, add in the spices (garam masala, coriander powder, turmeric powder, red chilli powder, black pepper, cardamom powder, and salt to taste). Fry for a few minutes, and then add the water. Bring to a boil and then add the soaked and drained rice. Cover and cook for 15 minutes.

Meanwhile, heat the butter in a small pan and fry the cashew nuts and raisins. Add to the biryani and mix. Garnish with the chopped coriander leaves and mint leaves. Cover and cook on low heat for 15 minutes. Remove from heat and let it rest for 10 minutes before serving.
