Chicken and Mushroom Individual Pies

If you’re craving a hearty, comforting meal that’s both delicious and super easy to make, then individual chicken and mushroom pies are a great option. This tasty dish is sure to keep you and your family happy, plus it’s a great way to use up leftovers. They’re also great for meal prepping, as they freeze well and can be saved for later.

Ingredients

For the pastry: 2 cups plain flour, 125g cold butter, 1 teaspoon salt, 6-8 tablespoons cold water.

For the filling: 2 tablespoons olive oil, 1 onion, finely chopped, 2 cloves garlic, crushed, 2 chicken breasts, diced, 1/2 cup mushrooms, sliced, 1 tablespoon plain flour, 1/2 cup chicken stock, 1/2 cup cream, 1/4 cup grated cheese, salt and pepper, to taste.

Instructions

1. To make the pastry, mix the flour, butter and salt together in a bowl until it resembles breadcrumbs. Add the cold water, a tablespoon at a time, until the mixture comes together. Turn onto a floured surface and knead briefly until smooth. Wrap in cling film and place in the fridge for 30 minutes.

2. Heat the oil in a large frypan over medium heat. Add the onion and garlic and cook for a few minutes until softened. Add the chicken and cook for a further 5 minutes until golden brown. Add the mushrooms and cook for a few more minutes.

3. Sprinkle the flour over the chicken and mushroom mix and stir to combine. Pour in the stock and cream and bring to a gentle simmer. Cook for a few minutes until the sauce has thickened, then season with salt and pepper to taste. Remove from the heat and set aside.

4. Preheat the oven to 200°C. Grease 4 individual pie dishes. Roll the pastry out on a lightly floured surface until it’s large enough to cover the pie dishes. Cut out 4 circles for the pie lids.

5. Line the pie dishes with the pastry and fill with the chicken and mushroom mixture. Top with the pastry lids and press the edges together to seal. Make a few small slits in the top of the pies to allow the steam to escape.

6. Bake for 20-25 minutes until golden brown. Sprinkle with grated cheese and bake for a further 5 minutes.

Each serving of chicken and mushroom pie contains approximately 590 calories, 28g of fat, 48g of carbohydrates, and 39g of protein. It also contains a good source of vitamins and minerals, including Vitamin A, Vitamin C, Iron, and Calcium.
